OUR PHILOSOPHY - OUR MEZCAL

With Yaha-Yahui Organic Mezcal, we stand against the industry practices of mass production and monoculture. All our production processes are completely natural and certified organic. We do not use any additives or chemical treatments in the cultivation of our agaves or the production of our Mezcal. 

Additionally, our Maestros Mezcaleros cultivate semi-wild agaves, including the rare Arroqueños and Tobalás, from seeds. This practice results in stronger, more diverse plants and helps restore scarce agave populations.

The emphasis on restoration extends beyond just the agaves to the entire ecosystem in the area, where natural habitats, like forests, are allowed to interact with the cultivation and production of Mezcal.

We dedicate all our efforts to creating a genuinely unique, flavorful, and organic product. It is handcrafted with the utmost respect for the land and traditions, while also considering the community of Santa Maria Sola de Vega, a small village in the mountains of Oaxaca, Mexico.

OUR MAESTROS MEZCALEROS

Yaha-Yahui - Organic Mezcal has its roots in the family heritage of the two Maestros Mezcaleros Engracia Altamirano Montaño and her cousin Jose Manuel Lopez Montaño.

Both grew up in a family with a deeply rooted tradition of making Mezcal and have developed a passionate relationship with this spirit.

Seeing the consequences of increasingly industrialized production, they have made it their goal to make their process as sustainable as possible and keep traditional techniques alive.

ENSAMBLE MEZCAL

We only produce Mezcal with organic agaves that are ready for harvest. As a result, we have to accept fluctuating production sizes, as not all agave plants grow at an even pace. The quantity of agaves harvested can vary significantly from year to year. A problem that usually results in falling and rising prices in the Mezcal industry.

Our Maestros Mezcaleros typically produce Ensamble Mezcales, meaning that various types of agaves are used in the same production process. Each harvest results in a different composition, giving us a unique final product.

BATCH NO.1 - ENSAMBLE

Our very first production, Batch No. 1, is the result of our philosophy, organic cultivation and production, and rich traditions. It is a well-nuanced organic and artesanal spirit. 

Made with four different agaves: Arroqueño (55%), Mexicano (20%), Tobalá (15%), and Espadín (10%).  

This ensamble Mezcal comes with the lingering and long-lasting flavors of prune, tea, and tobacco, combined with mineral, roasted agave aromas.

We produced a limited amount of 596 liters.
